🌶️ It all started with the Mayans – and a hot cocoa

6000 BC. While no one in Europe yet knew how to bake bread, the Mayans of Mesoamerica were already mixing spicy pastes from chilies. The small red fruits were used not only for seasoning but also for spiritual rituals – for example, in ceremonial cocoa drinks. Yes, you read that right: the first "hot chocolate" was truly hot. Chili was always more than just an ingredient – it was culture.

But it wasn't until the arrival of Europeans in the 15th century that things really took off: Portuguese and Spaniards brought chili from Central America to Europe, Africa, and Asia. And there it spread like wildfire.

In India, it became an integral part of curry cuisine. In North Africa, harissa was created. In Korea, gochujang developed – a fermented paste that still forms the basis of many dishes today. And in Yemen? The green sauce Zhoug is still a national treasure there.

With chili, not only flavors but entire food cultures traveled. Here are a few highlights on the world map of chili sauces:
