Fiery Lentil Curry

This recipe is for four people and takes about 40 minutes to prepare.

Ingredients:

Naan Bread: 10 g yeast, 200 ml lukewarm water, 400 g flour, 3 tbsp yogurt, 1 tsp salt, 2 tbsp sugar
Curry: 1 large carrot, 1 onion, ½ leek, 2 large potatoes, 1 clove garlic, 1 tbsp curry powder, 1 tsp turmeric, 200 g red lentils, 2 cans coconut milk, 1 knob ginger, 2 tbsp Habanero & Mango Sauce, 1 chili pepper, 1 lime, 1 cinnamon stick, olive oil, salt
Mint Yogurt: 200 ml yogurt (3.5% fat), some fresh mint, salt / pepper

Preparation:
(1) We start with the dough for the naan bread. First, dissolve the yeast in the warm water and then knead it with the remaining ingredients into a smooth dough. Let the dough rise for about 20 minutes.
(2) In the meantime, peel the carrots, onion, garlic, and potatoes. Grate or finely dice the carrots. Cut the potatoes into cubes. Finely chop the garlic and onions.
(3) Lightly fry everything in a little oil or coconut fat. Add the curry powder or paste and turmeric. Add the lentils and deglaze with the coconut milk. Finely chop the ginger and chili and add them as well. Now add the Habanero & Mango Sauce and cinnamon stick. Let everything simmer for about 15 minutes, adding a little water in between so it doesn't get too thick. Dice and wash the leek and add it to the curry. Finally, when the lentils are cooked, season with salt and spice to taste.
(4) Finally, mix all the ingredients for the mint yogurt and serve with the curry.
