Mafé (Senegalese Peanut Stew)
This Senegalese peanut stew combines sweet potatoes with hearty peanut butter and a touch of spice. Perfect for comfort & enjoyment! 🇸🇳
Ingredients & Preparation 👇
- 🧅 1 onion
- 🧄 1 clove of garlic
- 🥕 1 carrot
- 🫑 1 red bell pepper
- 🍠 1 small sweet potato
- 🥬 6 okra pods (optional)
- 🫒 1 tbsp olive oil
- 🥜 2 tbsp peanut butter (creamy)
- 🍅 1 can chopped tomatoes (400g)
- 🥫 250 ml vegetable broth
- 🍚 200g white rice
- 🌶️ 1 tsp SOCHILI Allrounder (to taste)
- 🥄 1 tsp cumin & paprika powder
- 🧂 Salt & pepper
- 🌿 Fresh cilantro or parsley for garnish
- 🥜 Peanuts for garnish
Dice the onion, garlic, carrot, bell pepper, okra, and sweet potato. Sauté in a large pot with olive oil for 5 minutes.
Add tomatoes, vegetable broth, peanut butter and spices (incl. Spicy Allrounder), stir well and bring to a boil.
Simmer the stew over medium heat for approx. 20 minutes until the vegetables are tender and the consistency is creamy.
Cook the rice in parallel.
Top with fresh herbs and serve with rice!
